Healthy Tomato Soup
There is nothing like homemade soup on a cold day. Actually, there is nothing like homemade soup any day in my opinion. All of my soups start with my homemade stock. You can use store bought as well. I’d recommend you buy a low sodium stock as regular stocks are usually “loaded” with salt. Also, for the gluten free version, buy a gluten free stock.

The key ingredient in this soup is obviously tomatoes. It is important to buy bright juicy tomatoes to ensure you get that amazing taste, like the aroma walking into your Italian grandmothers’ garage as they crush tomatoes for their pasta sauces. That’s assuming you are Italian of course (insert smiley face). For this recipe, I used fresh plum tomatoes.
Alright, let’s do this!

Add oil to a pan on medium heat. Add the onions and garlic. Cook and stir for 2 minutes. Take a second to smell the garlic as it starts to cook and sizzle! Mmmm. Stir to ensure you don’t burn the garlic. Burnt garlic doesn’t smell or taste so good. Trust me on this one!
Add the tomatoes, stock, salt and pepper. Cook and stir until soft – approximately 10 minutes.

Remove the pan from the heat. Add basil leaves and worchestershire sauce.
Add to a blender and pulse or blend until smooth.

Taste and adjust the seasoning to your liking. Remove and serve hot. Garnish with basil leaves. Even add a little cheese if you like.

THE GOODS!
1 tbsp extra virgin olive oil
1 medium size onion chopped
4 gloves garlic minced
7 medium sized tomatoes chopped – 7 cups
1 cup chicken stock (preferably homemade stock – gluten free)
1 tsp salt and pepper
½ cup basil leaves chopped
4 dashes worchestershire sauce
LET'S DO THIS!
Add oil to pan on medium heat

Add tomatoes, stock, salt and pepper
Cook and stir for 10 minutes or until soft
Remove from the heat
Add basil leaves and worchestershire sauce
Add to blender and pulse or blend until smooth
Taste and adjust seasoning to your liking
Remove and serve hot
Garnish with basil leaves
